granola with mixed nuts and pumpkin seeds, Greek yogurt, raspberries, and blueberries

When i made this granola recipe for the first time, i thought i need to share it with the whole world. This recipe is super tasty, easy to make and will save you a lot of time in the mornings.

The final result is a salty, not-too-sweet granola with a cinnamon flavor. So if this sound good to you, i highly recommend giving this one a try.

INGREDIENTS

  • 300 g oats

  • 100 g mixed nuts and seeds (i used roasted mixed nuts and added them at the end)

  • 30 g melted coconut oil

  • 50 g maple syrup

  • 1 tsp vanilla essence

  • 1 tsp cinnamon

  • 1 pinch of salt

INSTRUCTIONS

  • Preheat the oven to 160°C. Use both top and bottom heat.
  • Line a large baking pan with parchment paper.
  • Combine all the dry ingredients in a bowl and then add melted coconut oil and maple syrup. Stir until well combined.
  • Spread into a thin layer on the prepared baking pan.
  • Bake for 20 minutes until the granola starts to turn golden-brown.
  • Let the granola cool completely and store it in a plastic container or a glass jar.

NOTES

  • You can substitute maple syrup with honey or other syrups you like.
  • Granola is great with Greek yogurt and fresh fruits or berries, like a yogurt parfait. Also, you can eat it as cereal with milk, or use it as a topping for smoothie bowls.
  • Store the granola in a plastic container or a glass jar at room temperature for up to two weeks.
