Sweet and spicy tofu soba noodles

Tofu soba noodles are a great option for a quick, but healthy and nourishing lunch or dinner. Soba are a Japanese buckwheat type of noodles, perfect for fast and delicious meal. I think you can find soba noodles in Asian section of all large grocery stores. This recipe is vegan, high protein and full of flavor.

  • 150 g soba noodles

  • 250 g tofu (1 package)

  • 250 g frozen vegetables

  • 200 g chopped tomatoes

  • 3 tbs soy sauce

  • 1/2 tbs maple syrup

  • salt

  • chilli flakes


  • Cook the tofu: Preheat a large pan over high heat. Cut tofu into small cubes. Once the pan is hot, add the tofu. Saute for about 5 minutes until the tofu in golden brown.
  • Cook the vegetables: After the tofu is ready, reduce the heat to medium. Add frozen vegetables into the same pan and stir them until completely defrosted. Add soy sauce, maple syrup and chopped tomatoes and stir until the sauce is thickened. At the end add chilli and salt.
  • Cook the noodles: cook the soba noodles according to the package instructions (for about 5 minutes). When the noodles are done, rinse them under cold water.
  • Combine everything: Add cooked noodles in the same pan with tofu and vegetables and combine everything while the pan is on low heat. Add 1 additional tablespoon of soy sauce.


  • Serve immediately, garnished with mix of nuts and seeds you like and pickled ginger.
  • If you don’t have ginger or simply don’t like it, you can use chopped green onion.
