banana pancakes with blueberries, strawberries, and maple syrup

Banana pancakes are my go-to breakfast: they are easy to make, healthy and delicious. Also, these pancakes are sugar-free and gluten-free. If you are like me: you want something sweet for breakfast to satisfy your sweet tooth, but, at the same time, you want a balanced and healthy meal to start your day with, then this recipe is for you!

Banana oat pancakes

Ingredients

  • 2 bananas (240 g)

  • 2 eggs

  • 60 g oats

  • 1 tsp vanilla essence

  • pinch of salt

Directions

  • Mix all the ingredients by hand or, easier, with a blender until everything is well combined.
  • Heat a good quality, non-stick pan over medium heat and lightly grease with a small amount of olive oil.
  • Add 1-2 tablespoons of pancake batter and cook until some bubbles appear on the top and the edges are slightly golden.
  • Flip the pancakes with a spatula and cook for 1-2 minutes more.

Notes

  • Don’t miss your favorite toppings. I personally love adding maple syrup, apricot jam, peanut butter, fresh fruits, and berries.
