shakshuka

Shakshuka is one of my favourite meals. It’s quick and easy to make and full of flavor. You can enjoy this meal at any time of the day.

Unlike traditional recipe, this recipe don’t contain bell peppers. I tried both variations and both are great.

Ingredients

  • 1 tbs olive oil

  • 1 onion, chopped

  • 2 garlic gloves, pressed

  • 400 g fresh or canned tomatoes, chopped

  • 4 eggs

  • 60 g feta (i used romanian cheese called telemea)

  • Parsley

  • Spices: chilli flakes, oregano, thyme, salt and pepper

  • Crusty bread, for serving

Directions

  • Heat 1 tablespoon of olive oil in a pan on medium heat.
  • Add chopped onion and cook for 1 minute, and then add the garlic and stir for 20 seconds.
  • Pour in chopped tomatoes(fresh or canned) and cover and let simmer for about 5 minutes.
  • Season with chilli flakes, oregano, thyme, salt and pepper and mix well.
  • Reduce the heat to medium-low and crack the eggs.
  • Add feta on top.
  • Cover the pan and cook for about 4 minutes until egg whites are firm and yolks are soft. If you like your eggs hard, you can let them cook for 1-2 minutes more.
  • Garnish with parsley and eat straight from the pan with crusty bread.

Notes

  • This recipe would be great with cooked beans or chickpeas for more protein. Just add them after step 3.
  • If you want to add bell peppers, reduce the amount of tomatoes. You can add them after step 2.
